  • 2 medium beets, peeled and diced (about 2 cups)
  • 2 medium sweet potatoes, peeled and diced (about 2 cups)
  • 3 tbsp extra virgin olive oil
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted pecans
  • 3 tbsp balsamic vinegar
  • 4 cups fresh spinach or arugula

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss diced beets and sweet potatoes in olive oil, salt, and pepper. Spread on a lined baking sheet.
  3. Roast for 30-35 minutes until tender and caramelized.
  4. While veggies roast, toast pecans in a skillet over medium heat for about 5-7 minutes.
  5. In a bowl, combine roasted vegetables, spinach or arugula, feta cheese, toasted pecans, and balsamic vinegar.
