  • 4 oz creamy goat cheese

  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub the beets clean, wrap each in aluminum foil, and roast for 45-60 minutes until tender.
  2. Allow beets to cool slightly, then peel off the skins and slice or cube them.
