  • 1 whole chicken (45 pounds)
  • 2 tablespoons extra virgin olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 4 whole garlic cloves
  • 1 lemon, halved
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken under cool water and pat dry with paper towels.
  3. Rub olive oil all over the chicken, then season generously with salt and pepper inside and out.
  4. Stuff the cavity with garlic cloves, lemon halves, and fresh herbs.
  5. Place the chicken breast-side up in a roasting pan and roast for 1 hour to 1 hour and 15 minutes until golden brown and the internal temperature reaches at least 165°F (74°C).
  6. Let it rest for at least ten minutes before carving, drizzling with pan drippings if desired.
