  • 12 egg roll wrappers
  • 1 cup cooked corned beef, shredded
  • 1 cup Swiss cheese, shredded
  • 1/2 cup sauerkraut, well-drained
  • 1/4 cup Thousand Island dressing
  • Oil for frying (vegetable or canola)

Instructions

  1. In a mixing bowl, combine the shredded corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing.
  2. Lay an egg roll wrapper on a flat surface with one corner facing you. Spoon about 2 tablespoons of the filling onto the center. Fold up the bottom corner over the filling, fold in the sides, and roll tightly to seal.
  3. Heat oil in a large skillet to 350°F (175°C). Fry egg rolls in batches for about 3-4 minutes on each side until golden brown.
  4. Remove from oil and drain on paper towels. Serve warm with extra Thousand Island dressing for dipping.
