  • 8 oz dark chocolate (at least 70% cocoa)
  • 2 cups fresh raspberries
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 3 large eggs (room temperature)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line it with parchment paper.
  2. Melt the dark chocolate in a heatproof bowl over simmering water. Stir until smooth; let cool slightly.
  3. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold in the cooled chocolate.
  4. Puree half the raspberries until smooth, then fold into the mousse mixture.
  5. Pour half of the mousse into the prepared cake pan, spreading evenly. Add dollops of raspberry puree and top with remaining mousse.
  6. Bake for about 30 minutes or until set but slightly jiggly in the center. Cool, then refrigerate for at least four hours or overnight.
