  • 2 tbsp ranch seasoning mix
  • 2 bell peppers (any colors), chopped
  • 1 medium zucchini, sliced into half-moons
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Optional: 2 cups cooked pasta or rice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
