  • 1 lb fresh large shrimp, peeled and deveined
  • 1 cup parboiled long-grain rice
  • 1 cup bell peppers (mixed colors), diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onion and bell peppers until softened (about 5 minutes).
  2. Add fresh shrimp to the skillet and cook until pink (3-4 minutes).
  3. In a large bowl, combine sautéed vegetables with cooked rice, cream of mushroom soup, garlic powder, and half the cheddar cheese. Mix well.
  4. Transfer mixture to a greased casserole dish and top with remaining cheddar cheese.
  5. Preheat oven to 350°F (175°C) and bake uncovered for 25-30 minutes until golden and bubbly.
