Ingredients

Scale
  • 1 lb ground beef (80/20)
  • 1 medium yellow onion, chopped
  • 1 cup bell peppers (red or green), chopped
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 1/2 cup green olives, sliced
  • 1 cup tomato sauce (low-sodium preferred)
  • 1/4 cup raisins (optional)
  • Fresh cilantro for garnish

Instructions

  1. Prepare by chopping the onion and bell peppers while mincing the garlic.
  2. In a large skillet over medium heat, add olive oil. Once hot, sauté onions until translucent (about 4 minutes). Add garlic and cook for another minute.
  3. Increase heat slightly and add ground beef. Cook until browned, breaking it apart with a wooden spoon (6-8 minutes).
  4. Stir in the chopped bell peppers, cumin, salt, pepper, and olives. Cook until veggies soften (about 5 minutes).
  5. Pour in the tomato sauce and add raisins if using. Simmer on low heat for 10-15 minutes to meld flavors.
  6. Just before serving, sprinkle fresh cilantro on top and serve hot over rice or use as taco filling.
