  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz Philadelphia cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs (room temperature)
  • Fresh fruit or chocolate sauce (optional for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, ⅓ cup sugar, and melted butter until combined. Press firmly into the bottom of the prepared pan to form the crust.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add ¾ cup sugar while mixing until creamy.
  4. Incorporate sour cream and vanilla extract, then add eggs one at a time, beating gently after each addition.
  5. Pour the cheesecake filling over the crust and bake for 30-35 minutes until set but slightly jiggly in the center.
  6. Allow to cool at room temperature before refrigerating for at least four hours before cutting into squares.
