  • 1 whole chicken (34 pounds)
  • 6 garlic cloves (minced)
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 tbsp lemon juice (freshly squeezed)
  • ¼ cup olive oil
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix minced garlic, smoked paprika, ground cumin, salt, pepper, olive oil, oregano, and lemon juice to create a marinade.
  3. Rinse the chicken under cold water and pat it dry. Rub the marinade all over and underneath the skin.
  4. Place the marinated chicken in a roasting pan breast-side up. Roast for about 75 minutes or until the internal temperature reaches at least 165°F (75°C) and the skin is crispy.
  5. Remove from oven and let it rest for 10 minutes before carving.
  6. Serve with your favorite sides and drizzle any leftover marinade over the top.
