  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for coating)
  • 1/4 cup granulated sugar
  • 1 tsp peppermint extract
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and half of the powdered sugar until light and fluffy.
  3. Mix in peppermint extract and optional chopped nuts.
  4. Sift together flour and remaining powdered sugar; gradually add this mixture to the butter mixture until well combined.
  5. Form small balls of dough (about 1 inch in diameter) and place them on prepared baking sheets, leaving space between each cookie.
  6. Bake for 10-12 minutes until lightly golden on the bottom but still soft on top. Allow cooling slightly before rolling in powdered sugar again.
