Instructions

  1. Rinse quinoa under cold water and cook in 2 cups boiling water for about 15 minutes until fluffy.
  2. In a large bowl, mix peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Fold in rolled oats and cooked quinoa; add chocolate chips if desired.
  4. Line an 8×8 inch baking dish with parchment paper, spread the mixture evenly, pressing down firmly.
