  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy (about 3 minutes).
  3. Mix in the egg and vanilla extract until fully combined.
  4. Gradually add the flour mixed with baking powder, stirring gently until just combined.
  5. Divide the dough into three portions; tint one red, one blue, and leave the last portion plain using gel food coloring. Knead until colors are evenly distributed.
  6. Roll small balls of dough (about one tablespoon each), coat them in powdered sugar, and place them on the prepared baking sheets, spaced two inches apart.
  7. Bake for 10-12 minutes until set but soft in the center. Let cool on baking sheets for five minutes before transferring to wire racks.
