  • 2 veal shanks (about 1.5 lbs each)
  • 2 tbsp olive oil
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1 cup dry white wine
  • 1 cup low-sodium chicken broth
  • 1 can (14 oz) whole peeled tomatoes, crushed
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Season veal shanks with salt and pepper, then sear each side until golden brown (4-5 minutes per side). Remove from pot.
  2. In the same pot, sauté carrots, celery, onion, and garlic until softened (about 5 minutes).
  3. Deglaze the pot with white wine, scraping up any bits stuck to the bottom; let simmer for 2 minutes.
  4. Return the shanks to the pot and add crushed tomatoes and chicken broth until shanks are halfway covered; stir gently.
  5. Cover the pot and slow cook in an oven preheated to 325°F (160°C) for about 2 hours until tender.
  6. Serve on plates with sauce drizzled on top and garnish with fresh parsley.
