  • 24 Oreo cookies (for crust)
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp mint extract
  • 3 large eggs
  • ½ cup mini chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C). Crush the Oreo cookies in a medium bowl until fine crumbs form. Mix in melted butter until fully combined.
  2. Grease a springform pan with non-stick spray. Press the cookie mixture into the bottom of the pan to form an even layer. Bake for 10 minutes.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and mix well. Add eggs one at a time, mixing after each addition. Stir in mint extract and chocolate chips.
  4. Pour the cream cheese mixture over the baked crust and spread evenly. Bake for an additional 25–30 minutes until slightly jiggly but firm around edges.
  5. Turn off the oven and leave cheesecake inside to cool gradually for about an hour. Refrigerate for at least four hours or overnight before serving.
