  • 1 green bell pepper, diced

  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1/2 cup pimento-stuffed olives, chopped
  • 1 tsp ground cumin
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic; sauté until translucent.
  2. Add the ground beef, breaking it apart with a spatula. Cook until browned.
  3. Stir in the diced bell peppers and cook until they soften slightly.
  4. Pour in the fire-roasted diced tomatoes along with their juices. Add chopped olives, cumin, soy sauce, salt, and pepper; mix well.
  5. Let the mixture simmer for about 10 minutes to meld flavors.
  6. Serve warm over rice or in tortillas, garnished as desired.
