Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Melt the butter in a microwave-safe bowl; let it cool slightly.
  3. In a large mixing bowl, combine both sugars with melted butter and mix until smooth.
  4. Add eggs one at a time, mixing well after each addition along with vanilla extract.
  5. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  6. Gradually add dry ingredients to the wet mixture until just combined.
  7. Gently fold in oats, raisins, and nuts if using.
  8. Drop spoonfuls of dough onto prepared baking sheets about two inches apart.
  9. Bake for 10-12 minutes until golden brown around the edges but still soft in the center.
  10. Allow cooling on sheets before transferring to wire racks.
