  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup medium salsa
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 tbsp Mexican seasoning blend (cumin and chili powder)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray your baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, sauté until golden brown (about 6-7 minutes per side). Let cool slightly before shredding.
  3. In a large bowl, combine shredded chicken, salsa, black beans, corn, half of the cheese, and Mexican seasoning blend.
  4. Layer half the mixture in the prepared baking dish, top with remaining cheese, then add the rest of the mixture on top.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly.
  6. Serve hot, garnished with fresh cilantro or avocado if desired.
