  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the chickpeas and kidney beans under cold water to remove excess sodium.
  2. Chop the green beans into bite-sized pieces and dice the red bell pepper, cherry tomatoes, and red onion.
  3. In a large mixing bowl, combine the green beans, chickpeas, kidney beans, bell pepper, cherry tomatoes, red onion, and parsley.
  4. In a separate bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  5. Pour the dressing over the salad mixture and toss gently to combine.
