  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese (fresh)
  • 4 garlic cloves (minced)
  • 1 cup low-sodium chicken broth
  • ½ cup sun-dried tomatoes (chopped)
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients: chop garlic and sun-dried tomatoes, and grate Parmesan cheese.
  2. Cook the chicken: In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper, searing until golden brown (5–7 minutes per side). Remove from skillet.
  3. Sauté garlic and sun-dried tomatoes: In the same skillet, add more olive oil if necessary. Add minced garlic and sun-dried tomatoes, cooking until fragrant (1–2 minutes).
  4. Create the cream sauce: Pour in heavy cream and chicken broth; stir well. Add Italian seasoning and let simmer for about 5 minutes until slightly thickened.
  5. Add spinach and cheese: Stir in fresh spinach until wilted (about 2 minutes), then mix in grated Parmesan until melted.
  6. Toss everything together: Return cooked chicken to skillet along with drained pasta, tossing gently until coated with sauce.
