  • 2 medium zucchinis (about 300g)
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 tsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and slice zucchinis into rounds about half an inch thick.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of panko breadcrumbs, parmesan cheese, garlic powder, salt, and pepper.
