Instructions
- Create the roux by melting equal parts butter and flour in a heavy pot over medium heat, stirring constantly until dark brown.
- Sauté onion, celery, and bell pepper in the roux for about 5-7 minutes until softened.
- Add minced garlic and Cajun seasoning; cook until fragrant.
- Gradually stir in chicken broth and diced tomatoes; season with salt and pepper.
- Add sliced sausage and optional okra; simmer for about 30 minutes.
- Stir in shrimp and cook for an additional 5 minutes until pink and cooked through. Finish with lemon juice before serving.
