  • 1 lb Andouille sausage (sliced)
  • 1 yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 celery stalks (diced)
  • 4 cloves garlic (minced)
  • 14 oz diced tomatoes (canned)
  • 4 cups low-sodium chicken broth
  • 2 tbsp Cajun seasoning
  • 1 cup okra (sliced)
  • juice of 1 lemon

Instructions

  1. Create the roux by melting equal parts butter and flour in a heavy pot over medium heat, stirring constantly until dark brown.
  2. Sauté onion, celery, and bell pepper in the roux for about 5-7 minutes until softened.
  3. Add minced garlic and Cajun seasoning; cook until fragrant.
  4. Gradually stir in chicken broth and diced tomatoes; season with salt and pepper.
  5. Add sliced sausage and optional okra; simmer for about 30 minutes.
  6. Stir in shrimp and cook for an additional 5 minutes until pink and cooked through. Finish with lemon juice before serving.
