  • 4 cups low-sodium vegetable broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
  2. Stir in cumin and turmeric; cook for another minute until fragrant.
  3. Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to a simmer for 20–25 minutes until lentils are tender.
  4. Stir in fresh lemon juice and zest. Season with salt and pepper as desired.
