Lemon pepper shrimp and broccoli pasta is a quick, vibrant dish bursting with zesty flavors, perfect for busy weeknights or impressing guests.

  • 1 lb shrimp (peeled and deveined)
  • 2 cups broccoli florets
  • 8 oz spaghetti or fettuccine
  • 3 tbsp extra virgin olive oil
  • Juice and zest of 1 lemon
  • 4 garlic cloves (minced)
  • 1 tsp black pepper
  • ½ cup grated parmesan cheese
  • red pepper flakes (optional)

Instructions

  1. Cook pasta according to package directions until al dente; reserve 1 cup of pasta water and drain.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add shrimp and black pepper; cook until shrimp are pink and opaque, about 3-4 minutes.
  4. Toss in broccoli florets with reserved pasta water; cover briefly until broccoli is tender-crisp.
  5. Combine cooked pasta with lemon juice, lemon zest, parmesan cheese, and red pepper flakes if using; toss to coat well.
  6. Serve hot, garnished with extra parmesan or parsley as desired.
