- 4–5 lb whole chicken
- 2 fresh lemons
- 4 garlic cloves
- 2 tbsp fresh rosemary
- 2 tbsp fresh thyme
- 2 tbsp fresh parsley
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
- Preheat your oven to 425°F (220°C).
- In a bowl, mix olive oil, minced garlic, lemon juice, salt, pepper, and chopped herbs to create the marinade.
- Pat the chicken dry and generously rub the marinade all over it, including under the skin.
- Stuff halved lemons and extra herb sprigs inside the chicken cavity.
- Place the chicken in a roasting pan and roast for about 1 hour and 20 minutes until juices run clear from the thigh.
- Allow resting for 10-15 minutes before carving.
