4 –5 lb whole chicken
2 fresh lemons
4 garlic cloves
2 tbsp fresh rosemary
2 tbsp fresh thyme
2 tbsp fresh parsley
3 tbsp extra virgin olive oil
Salt and pepper to taste
Preheat your oven to 425°F (220°C).
In a bowl, mix olive oil, minced garlic, lemon juice, salt, pepper, and chopped herbs to create the marinade.
Pat the chicken dry and generously rub the marinade all over it, including under the skin.
Stuff halved lemons and extra herb sprigs inside the chicken cavity.
Place the chicken in a roasting pan and roast for about 1 hour and 20 minutes until juices run clear from the thigh.
Allow resting for 10-15 minutes before carving.
