Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, room temperature
  • 3 large eggs, room temperature
  • ½ cup whole milk (or almond milk)
  • ¼ cup honey (high-quality)
  • 1 tbsp culinary lavender buds (food-grade)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a small saucepan over low heat, combine milk and lavender buds. Heat gently until fragrant; do not boil. Steep while preparing other ingredients.
  3. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  4. In a large mixing bowl, cream butter and sugar until light and fluffy (about 3-4 minutes).
  5. Add eggs one at a time, mixing well after each addition.
  6. Gradually add the flour mixture alternating with the honey and infused milk until just combined. Fold in extra lavender buds if desired.
  7. Fill muffin tins about two-thirds full with batter and bake for 18-20 minutes or until golden brown.
  8. Allow cooling in the pan before transferring to wire racks.
