  • 3 medium zucchinis, thinly sliced
  • 1 lb lean ground turkey
  • 1 cup part-skim ricotta cheese
  • 2 cups low-sugar marinara sauce
  • 2 cups fresh spinach, chopped
  • 1 cup part-skim mozzarella cheese, shredded
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground turkey; season with salt and pepper.
  3. Add chopped spinach to the skillet and sauté until wilted.
  4. In a baking dish, layer marinara sauce, zucchini slices, turkey mixture, ricotta cheese, and mozzarella cheese. Repeat layers until all ingredients are used.
  5. Cover with aluminum foil and bake for 30 minutes; remove foil and bake for an additional 15 minutes until bubbly.
  6. Let cool for 10 minutes before slicing.
