1 cup fresh key lime juice
1 can (14 oz) sweetened condensed milk
1/2 cup sour cream
3 large egg yolks
1 cup graham cracker crumbs
6 tbsp unsalted butter, melted
1/2 cup granulated sugar
Lime zest for garnish
Instructions
Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and sugar. Press into a 9-inch pie pan to form the crust.
Bake the crust for 8-10 minutes until golden brown. Allow to cool completely.
In another bowl, whisk together sweetened condensed milk, egg yolks, sour cream, lime juice, and lime zest until smooth.
Pour the filling into the cooled crust and bake for an additional 10-15 minutes until set but slightly jiggly in the center.
Chill in the refrigerator for at least 3 hours before serving.
