1 cup green or brown lentils, rinsed
2 medium carrots, diced
2 stalks celery, diced
1 medium yellow onion, diced
3 cloves garlic, minced
1 can (14 oz) crushed tomatoes
4 cups low-sodium vegetable broth
1 tsp dried oregano
1 tsp dried basil
2 tbsp olive oil
Salt and pepper to taste
Instructions
In a large pot over medium heat, add olive oil and sauté the diced onion, carrots, and celery until soft (about 5 minutes).
Stir in the minced garlic, oregano, and basil; cook for an additional minute until fragrant.
Add the rinsed lentils and crushed tomatoes (with juice) to the pot; stir to combine.
Pour in the vegetable broth; bring to a boil then reduce heat to low. Cover and simmer for about 30 minutes or until lentils are tender.
Taste and adjust seasoning with salt and pepper as needed.
Serve hot, garnished with fresh parsley or Parmesan cheese if desired.
