  • 2 cups fresh cherries, pitted
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 cup unsalted butter, chilled
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, combine pitted cherries with sugar, cornstarch, lemon juice, and vanilla extract.
  3. On a floured surface, roll out chilled pie crust to about 1/8-inch thick. Cut circles using a cookie cutter.
  4. Place a spoonful of cherry filling in the center of each dough circle, fold over, and crimp edges with a fork.
  5. Arrange pies on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown.
  6. Allow to cool slightly before serving.
