  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 tbsp unsalted butter
  • 1 can (28 oz) whole peeled tomatoes
  • 1 cup full-fat coconut milk
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp sugar
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Dice chicken into bite-sized pieces. Set Instant Pot to 'Sauté' mode and melt butter until bubbly. Add garlic and ginger; sauté for about 1 minute.
  2. Stir in garam masala, cumin, coriander, salt, and sugar; cook for another 30 seconds to release aromas.
  3. Add diced chicken and crushed tomatoes; stir well to coat the chicken with spices.
  4. Pour coconut milk over the top without stirring too much. Seal the lid and cook on high pressure for 10 minutes; allow natural release for 5 minutes before quick releasing remaining pressure.
  5. Serve hot over rice or naan, garnished with fresh cilantro.
