  • 1 cup marshmallow fluff (for frosting)
  • 2 cups shredded coconut (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, beat eggs with milk and melted butter. Add vanilla extract and mix well.
  4. Gradually combine wet and dry ingredients until just blended; do not overmix.
  5. Divide batter evenly between pans and bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool for 10 minutes before transferring to wire racks.
  6. For frosting, whip softened butter with marshmallow fluff until creamy. Gradually add powdered sugar until light and fluffy.
  7. Once cakes are completely cool, layer frosting between cakes and cover the entire cake with remaining frosting. Generously coat with shredded coconut.
