  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup honey
  • 2 tbsp fresh ginger, grated
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Prepare your ingredients by chopping the garlic and grating the ginger.
  2. In a mixing bowl, combine soy sauce, honey, grated ginger, minced garlic, and rice vinegar. Add chicken breasts and marinate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper.
  4. Place marinated chicken in the dish and pour any leftover marinade over them. Bake for 25-30 minutes until cooked through (internal temperature of 165°F).
  5. In a saucepan, simmer reserved marinade on medium heat. Stir in cornstarch mixture until thickened.
