  • 1 cup plain breadcrumbs
  • 1 large egg
  • 4 cloves fresh garlic, minced
  • 1/2 cup pure honey
  • 1/4 cup low-sodium soy sauce
  • 2 cups long-grain white rice (uncooked)
  • 2 cups mixed vegetables (bell peppers and broccoli)
  • 3 green onions, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, minced garlic, egg, salt, and pepper. Mix until just combined.
  3. Shape the mixture into small meatballs (about an inch in diameter) and place on a parchment-lined baking sheet.
  4. In a small bowl, whisk together honey, soy sauce, and remaining minced garlic to create the honey garlic sauce.
  5. Cook rice according to package instructions until fluffy.
  6. In a large casserole dish, spread cooked rice evenly across the bottom. Arrange meatballs on top and pour honey garlic sauce over them.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until meatballs are golden brown.
