  • 1 cup all-purpose flour
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar (sifted)
  • 2 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a Twinkie pan.
  2. In a large bowl, whisk flour, sugar, baking powder, spices, and salt.
  3. In another bowl, mix pumpkin puree, eggs, oil, and vanilla. Gradually combine with dry ingredients until just mixed.
  4. Fill Twinkie pan cavities two-thirds full and bake for 15-20 minutes or until a toothpick comes out clean.
  5. For the filling, beat cream cheese and powdered sugar together; add milk until desired consistency is reached.
  6. Once cooled, gently turn cakes out of the pan and fill each with the cream mixture from both ends.
  7. Dust with powdered sugar before serving.
