Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla; mix well.
  3. In another bowl, combine the flour, oats, baking soda, and salt. Gradually add this mixture to the wet ingredients until fully combined.
  4. Drop tablespoon-sized mounds of dough onto prepared baking sheets about two inches apart.
  5. Bake for 10-12 minutes or until golden brown around the edges. The centers may look slightly underbaked but will firm up as they cool.
  6. For the filling, beat together powdered sugar and softened butter until smooth. Spread filling between two cooled cookies to create sandwiches.
