  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Fresh herbs (thyme or parsley, optional)

Instructions

  1. In a large pot over medium heat, melt the butter until bubbly. Add the onions and sauté until translucent, about 5 minutes.
  2. Stir in the garlic and chopped celery; cook for an additional 4-5 minutes until the celery softens.
