4 cups fresh cherries, pitted
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/4 teaspoon salt
2 1/2 cups all-purpose flour
1 cup unsalted butter, cold and cubed
Ice water (as needed)
Pinch of salt for crust
Instructions
Preheat oven to 425°F (220°C).
In a bowl, combine pitted cherries, sugar, cornstarch, lemon juice, and salt; toss gently to mix.
For the crust, mix flour and salt; cut in cold butter until crumbly. Gradually add ice water until dough forms.
Roll out half the dough for the bottom crust and place it in a pie pan. Fill with cherry mixture.
Roll out the second half for a top crust or create lattice strips.
Bake for 15 minutes at 425°F (220°C), then reduce temperature to 350°F (175°C) and bake for another 25-30 minutes until golden brown.
