  • 1 lb ground beef
  • 1/2 lb ground pork (optional)
  • 2 (14 oz) cans San Marzano tomatoes
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium carrot, finely diced
  • 1 stalk celery, finely diced
  • 2 tbsp extra virgin olive oil
  • 1/2 cup red wine
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, and celery; sauté for 5-7 minutes until softened.
  2. Stir in minced garlic and cook for another minute. Add ground beef (and pork if using), breaking apart until browned.
  3. Pour in red wine, scraping the bottom of the pot. Simmer until most liquid evaporates (about 3-4 minutes).
  4. Stir in canned tomatoes with dried herbs; season with salt and pepper. Bring to a gentle boil then reduce heat.
  5. Cover partially and simmer for at least 30 minutes (up to an hour) to develop flavors.
  6. Taste and adjust seasoning as needed before serving with pasta or lasagna.
