  • 1 lb lean ground beef
  • 1 cup fresh breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 2 tsp garlic powder
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, basil, garlic powder, salt, and pepper. Mix gently to avoid overworking the meat.
  2. Shape into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Heat olive oil in a large pot over medium heat. Brown half of the meatballs for about five minutes; remove and set aside. Repeat with remaining meatballs.
  4. In the same pot, sauté diced carrots and celery until softened (about four minutes). Add diced tomatoes and vegetable broth.
  5. Return meatballs to the pot along with Italian seasoning. Bring to a gentle boil, then reduce heat and simmer for about twenty minutes.
  6. Serve hot, garnished with additional fresh basil or Parmesan if desired.
