Ingredients

  • 2 lbs bone-in lamb chops
  • 4 medium carrots
  • 4 medium waxy potatoes
  • 2 sweet onions
  • 4 cloves garlic
  • 4 cups vegetable broth
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 cup pearl barley (optional)

Instructions

  1. Chop vegetables and cube the lamb into bite-sized pieces.
  2. In a large pot over medium-high heat, sear the lamb in olive oil until browned on all sides. Remove and set aside.
  3. Add chopped onions and minced garlic to the pot; sauté until translucent.
  4. Stir in carrots and potatoes, then add vegetable broth, thyme, and bay leaves. Bring to a gentle boil.
  5. Reduce heat to low, cover the pot, and simmer for about 1.5 hours or until meat is fork-tender.
  6. Adjust seasoning with salt and pepper before serving. Ladle into bowls and garnish with fresh herbs if desired.
