  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large red onion, sliced
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Whole wheat or corn tortillas for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the chicken breasts and vegetables into strips.
  3. Season the chicken with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper.
  4. In a bowl, toss the sliced peppers and onion with remaining olive oil and spices until coated.
  5. Arrange seasoned chicken in the center of a parchment-lined sheet pan; surround with veggies.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
  7. Let sit for five minutes before slicing the chicken. Serve warm with tortillas.
