  • 2 cups sushi rice
  • 1 can (12 oz) Spam
  • 4 sheets sushi nori seaweed
  • ¼ cup rice vinegar (seasoned)
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • Toasted sesame seeds (optional)

Instructions

  1. Rinse the sushi rice under cold water until clear. Cook according to package instructions until tender.
  2. In a large bowl, combine cooked rice with rice vinegar, sugar, and salt while warm. Gently fold to mix.
  3. Slice Spam into 8 pieces and fry in a non-stick skillet over medium heat for about 3-4 minutes per side until golden brown.
  4. Lay a sheet of nori on a bamboo mat or plastic wrap. Spread about ½ cup of sushi rice in the center, pressing down firmly.
  5. Place one slice of cooked Spam on top. Optionally sprinkle with toasted sesame seeds.
  6. Fold the nori tightly over the rice and Spam to form a log shape. Moisten edges with water to seal.
  7. Slice into bite-sized pieces and serve with soy sauce or wasabi.
