  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)

  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt to taste
  • Juice of 1 lime
  • 8 flour or corn tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and bell peppers; sauté until soft and caramelized for about 5 minutes.
  2. Push veggies to one side of the skillet. Add ground beef to the other side, breaking it apart as it cooks until browned (approximately 7 minutes).
  3. Sprinkle chili powder, cumin, garlic powder, and salt over the beef mixture. Stir until well combined and let cook for an additional minute.
  4. Squeeze fresh lime juice over the mixture while stirring to enhance flavors.
  5. Warm tortillas in another skillet or microwave briefly to make them pliable.
  6. Serve the beef mixture in tortillas with desired toppings such as sour cream and cilantro.
