  • 4 cloves garlic (minced)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp unsalted butter

Instructions

  1. Prepare the artichokes by trimming stems and cutting off the top inch. Halve lengthwise and scoop out the inner leaves.
  2. Boil halved artichokes in salted water for 10-15 minutes until tender but firm. Drain and cool slightly.
  3. In a small saucepan, melt butter over low heat, add minced garlic, and stir until fragrant. Mix in lemon juice.
  4. Brush artichokes with olive oil, season with salt and pepper, and preheat grill to medium-high.
  5. Grill cut side down for 5-7 minutes until marked, then flip and brush with garlic butter; grill for another 3-5 minutes.
  6. Drizzle remaining garlic butter over grilled artichokes before serving. Garnish as desired.
