Green Chili Chicken Enchiladas are a delightful and flavorful dish that brings a fiesta to your table. Tender chicken is wrapped in warm tortillas and smothered in a zesty green chili sauce, creating an irresistible dining experience.

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh green chilies (mild or hot)
  • 10 corn tortillas
  • 1 ½ cups shredded Monterey Jack cheese
  • ½ cup sour cream
  • 1 tsp garlic powder
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Season chicken breasts with garlic powder, salt, and pepper. Bake for approximately 25 minutes until cooked through.
  2. Shred the baked chicken using two forks once it has cooled slightly.
  3. In a bowl, mix the green chilies, sour cream, and half of the shredded cheese until creamy.
  4. Spoon some shredded chicken and the sauce mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  5. Pour any remaining sauce over the top of the enchiladas and sprinkle with the rest of the cheese. Bake uncovered for about 20 minutes until bubbly and golden brown.
