  • 1 cup green beans, trimmed and cut into bite-sized pieces
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the green beans under cold water. Trim ends and cut into bite-sized pieces.
  2. In a large bowl, combine drained cannellini beans and chickpeas with the chopped green beans, diced cucumber, and halved cherry tomatoes.
  3. Add finely chopped red onion, parsley, and basil to the bean mixture.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
