  • 1 red bell pepper, cut into thick chunks
  • 1 yellow bell pepper, cut into thick chunks
  • 1 green bell pepper, cut into thick chunks
  • 1 medium red onion, cut into thick chunks
  • 1 medium zucchini, sliced into thick rounds
  • 2 tbsp extra virgin olive oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp cayenne pepper (adjust to taste)
  • Juice of 1 lemon

Instructions

  1. In a large bowl, whisk together olive oil, soy sauce, honey, garlic powder, cayenne pepper, and lemon juice to create the marinade.
  2. Add chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, prepare the vegetables by cutting them into uniform sizes for even cooking.
  4. Thread marinated chicken and vegetables onto skewers alternately.
  5. Preheat your grill over medium-high heat.
  6. Grill kabobs for about 12-15 minutes or until chicken reaches an internal temperature of 165°F (74°C), turning occasionally for even cooking.
