Feta pasta is a deliciously creamy dish that combines rich baked feta cheese with sweet roasted cherry tomatoes, garlic, and olive oil.   • 8 oz penne or fusilli pasta
  • 8 oz block feta cheese
  • 2 cups cherry tomatoes (1 pint)
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In the baking dish, combine cherry tomatoes, crumbled feta cheese, minced garlic, olive oil, red pepper flakes, salt, and pepper. Mix well.
  3. Roast in the oven for 25-30 minutes until the tomatoes burst and the feta softens.
  4. While roasting, cook pasta in salted water according to package instructions until al dente. Drain and set aside.
  5. Once roasted, combine the tomato-feta mixture with the cooked pasta in the baking dish and toss until well-coated.
  6. Serve immediately, garnished with fresh basil if desired.
