1 cup cherry tomatoes, halved
¼ medium red onion, finely chopped
½ cup feta cheese, crumbled (or vegan cheese)

¼ cup fresh parsley or mint, chopped

Instructions
1. Cook the farro: In a large pot, bring salted water to a boil. Add farro and cook according to package instructions until tender but chewy (about 15-20 minutes). Drain and let cool slightly.
